The Guo Yuan Yi Gold Award Pineapple Cake was awarded the Gold Prize at the 2013 Taipei Pineapple Cake Cultural Festival. The filling is made from carefully selected No. 17 Golden Diamond pineapples grown by farmers in Guanmiao, Tainan. It adheres to the golden ratio of 7 parts pineapple to 3 parts winter melon to create the championship filling. The outer pastry is specially made using Dutch anhydrous butter and New Zealand milk powder, with a touch of Danish cheese powder added to give it a sweet but not cloying taste. Before filling, the pastry is frozen in a freezer at 0°C for 8 hours to allow the outer crust to integrate and become flaky. Each cake is baked with the century-old craftsmanship of the master baker, interweaving golden crispy pastry with a unique and enticing sweet and sour filling.
